🌿 Quebec asparagus season is legendary
I’ve always loved asparagus, and when Quebec asparagus season arrives, usually from March to May, it’s one of my favorite ingredients to cook with. You’ll find them everywhere in public markets, perfectly fresh, and their short season makes them even more special. This air fryer asparagus is my favorite way to prepare them on weekdays: simple, quick, and the result is absolutely insane. Five ingredients, ten minutes total, and you have a side dish worthy of an Italian restaurant. ### 🇮🇹 **The Italian profile that makes flavors explode** I love the Italian profile on asparagus, finely grated pecorino and Italian spices, because it’s simple, delicious and literally makes the flavors explode. The pecorino brings that concentrated salty side that awakens the asparagus, the garlic provides depth, and the lemon zest with its juice squeezed just before serving brings the freshness that balances everything. It’s exactly the kind of side dish that transforms a grilled BBQ steak or baked fish into a special meal without requiring any extra effort.
⚡ Why the air fryer is a game-changer for asparagus
The air fryer is simply the best way to cook asparagus when you want crispy on the outside and tender on the inside in under 10 minutes. It’s fast, saves energy compared to turning on the oven for nothing, and the result is more consistent than on the BBQ or in a pan. 🌿 Cooking time varies according to thickness
This is the golden rule of air fryer asparagus cooking. For medium asparagus like in my recipe, aim for 7 to 9 minutes. For thin asparagus (my favorites), 5 to 6 minutes is enough. For very thick asparagus, go up to 9 to 11 minutes. Start with 5 minutes, shake the basket, then check every 2 minutes. When it’s crispy on the outside and still slightly tender inside, it’s ready. Overcooked mushy asparagus is terrible.
💧 Drying well after rinsing = guaranteed crispiness
Always rinse asparagus under cold water to remove sand, then pat thoroughly dry with a clean cloth. Residual moisture prevents oil from adhering properly and causes asparagus to steam instead of grill. Result: soggy sad asparagus.
🤝 Handle gently to avoid breaking
Asparagus is fragile, especially thin ones. When mixing with oil and spices, be gentle. Use your hands or a wooden spoon and roll them delicately rather than stirring hard. A broken stalk = piece that dries and burns in the air fryer.
🧀 Finely grated pecorino, ALWAYS at the end
Pecorino never goes in the air fryer with the asparagus. It would burn. We serve the asparagus, add the lemon zest and put the pecorino on top so it melts slightly with the heat of the freshly cooked asparagus. Always grate it fine (Microplane or fine side of cheese grater) so it melts and integrates evenly, not in big chunks that stay dry.
🧄 Garlic doesn’t burn if well coated
Many think chopped garlic will burn in the air fryer at 400°F. The truth? If you’ve mixed it well with oil and it sticks to the asparagus, it will cook quietly with them and flavor everything without browning. The secret is to mix well so each piece of garlic is coated with oil and stuck on an asparagus, not alone at the bottom of the basket.
📄 Air fryer parchment paper? Under the rack, not on top
The point of the air fryer is that air circulates freely around food. If you use special air fryer parchment paper (with holes), it should go AT THE BOTTOM of the basket, under the rack, never between the rack and asparagus. Otherwise you block air circulation and get steamed asparagus instead of crispy ones. Personally, for oiled asparagus, I don’t use any.

- 2 lb (900 g) fresh asparagus, trimmed (cut or snap off the tough base 2 to 3 cm)
- 2 tbsp (30 ml) olive oil
- 2 garlic cloves, finely chopped
- ½ tsp (2.5 ml) Italian seasoning
- Zest of 1 lemon
- Salt and pepper, to taste
- ¼ cup (60 ml) finely grated pecorino (Microplane or fine side of cheese grater)
- 1 tbsp (15 ml) fresh lemon juice (for serving)

Preparation
- Preheat the air fryer to 400°F (205°C).
- Rinse the asparagus and dry thoroughly with a clean cloth. This is essential for perfect crispiness.
- In a large bowl, gently toss the asparagus with olive oil, garlic, Italian seasoning, salt and pepper. Handle gently to avoid breaking the stalks.
- Place asparagus in the air fryer basket in a single layer (ideally, but 2 or 3 overlapping slightly is fine). Cook in batches if necessary.
- Cook 5 minutes, shake the basket, then continue cooking 2 to 4 more minutes depending on asparagus thickness. Check regularly. Asparagus is ready when crispy on the outside and still slightly tender inside. Overcooked mushy asparagus is terrible.
- Transfer to a serving dish, garnish with lemon zest, grated pecorino and drizzle with fresh lemon juice. Serve immediately.

The air fryer wins on all fronts for asparagus. It’s 2 to 3 times faster (7-9 min vs 20-25 min in oven), saves a lot of energy (no need to preheat a big oven for a small side dish), and the result is more consistent. Guaranteed crispy outside, tender inside. The oven is only better if you’re cooking for 8 people or more.
Yes, but add 2 to 3 minutes cooking time (white asparagus is usually harder than green). Follow the same method: 400°F, shake at half-time, check regularly. White asparagus absorbs Italian flavors even better because they’re milder in taste.
Not really, because cooking times and temperatures differ. Salmon needs about 8-10 minutes at 400°F depending on thickness, while thin asparagus is ready in 5-6 min. If your air fryer has two baskets like mine, it’s perfect. One basket for each. Otherwise, cook asparagus first (they tolerate waiting 5 min covered) then salmon after.
