- 2 lb (900 g) fresh asparagus, trimmed (cut or snap off the tough base 2 to 3 cm)
- 2 tbsp (30 ml) olive oil
- 2 garlic cloves, finely chopped
- ½ tsp (2.5 ml) Italian seasoning
- Zest of 1 lemon
- Salt and pepper, to taste
- ¼ cup (60 ml) finely grated pecorino (Microplane or fine side of cheese grater)
- 1 tbsp (15 ml) fresh lemon juice (for serving)

Preparation
- Preheat the air fryer to 400°F (205°C).
- Rinse the asparagus and dry thoroughly with a clean cloth. This is essential for perfect crispiness.
- In a large bowl, gently toss the asparagus with olive oil, garlic, Italian seasoning, salt and pepper. Handle gently to avoid breaking the stalks.
- Place asparagus in the air fryer basket in a single layer (ideally, but 2 or 3 overlapping slightly is fine). Cook in batches if necessary.
- Cook 5 minutes, shake the basket, then continue cooking 2 to 4 more minutes depending on asparagus thickness. Check regularly. Asparagus is ready when crispy on the outside and still slightly tender inside. Overcooked mushy asparagus is terrible.
- Transfer to a serving dish, garnish with lemon zest, grated pecorino and drizzle with fresh lemon juice. Serve immediately.
