Smoked cheese fondue with beer-caramelized onions

Ingredients

  • 200g smoked Oka cheese with rind, grated
  • 270g smoked Gouda with rind, grated
  • 250g smoked Cheddar, grated
  • 4 tsp. cornstarch
  • 1 small yellow onion, finely chopped
  • Olive oil
  • 1/4 cup fruity lager

Preparation

  • Place grated cheese and cornstarch in a large bowl and mix well. Set aside.
  • In a non-stick pan heated over medium-low heat, add a generous drizzle of olive oil. Add the yellow onion and cook for 15 minutes, stirring occasionally. Season with salt and pepper to taste. If the onions start to brown too quickly, lower the heat.
  • Pour in beer and cook for 2 to 3 minutes until reduced to a semi-dry consistency.
  • Add the grated cheeses to the pan. Melt over low heat, stirring, for 5-6 minutes. Add salt and pepper to taste, then stir until the fondue thickens slightly.
  • Serve this smoked cheese fondue with pieces of bread, crunchy vegetables and grapes!
