Rum and coke chicken wings

Ingredients

  • 1 lb chicken wings, separated
  • Olive oil
  • 2 tablespoons smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper from the mill

Ingredients for the sauce

  • 250 ml Coca Cola
  • 1/2 cup Chic Choc rum
  • 3 tablespoons brown sugar
  • 2 tablespoons ketchup
  • Juice of 1/2 lime
  • 2 tablespoons butter
  • Salt and pepper from the mill

Preparation

  • Place the chicken wings in a large bowl and add drizzle of olive oil. Toss to coat and set aside.
  • In a bowl, put the ingredients for the dry marinade, season with salt and pepper and mix. Pour half over chicken wings and toss to coat. Add the rest of the marinade and mix.
  • Preheat the oven to 400 °F. Line a large baking sheet with parchment paper.
  • Place the wings on the baking sheet and distribute. Place in the oven and cook for 30 minutes. Turn halfway through cooking. Remove from oven, throw into a large bowl and set aside.
  • In a small saucepan heated over high heat, add the coca cola, rum, brown sugar, ketchup, lime juice, season with salt and pepper then mix. Bring to a boil, reduce heat slightly and reduce for about 10 minutes or until one third. Remove from the heat, add the butter and mix to melt.
  • Pour the sauce over the chicken wings and toss to coat well. Change the parchment paper on the baking sheet and spread the wings over it.
  • Place in the oven and bake for 20 to 25 minutes or until the wings are nicely grilled. Turn halfway through cooking.
