Roasted garlic cherry tomato skewers

- 2 pints of mixed cherry and grape tomatoes (about 500 g / 17 oz total)
- ⅓ cup (80 ml) olive oil
- ½ tsp (2.5 ml) Italian seasoning
- ¼ tsp (1.25 ml) dried oregano
- 1 large garlic clove, finely chopped
- 2 tbsp (30 ml) white wine
- Salt and ground pepper

Preparation
- Thread the cherry and grape tomatoes onto wooden skewers. Set aside on a large plate.
- In a small pan over medium heat, combine the olive oil, Italian seasoning, oregano and chopped garlic. Season with salt and pepper and stir well.
- Cook for 4 to 5 minutes, stirring, until the garlic just barely begins to turn golden. Remove from heat, pour into a bowl and add the white wine. Stir well and set aside.
- Preheat the BBQ to maximum heat, then reduce to medium. Oil the grill grates.
- Place the tomato skewers on the grill and cook for about 2 minutes per side, until the tomatoes are lightly golden and starting to burst. Baste generously with the roasted garlic oil throughout cooking.
- Serve immediately as a side dish, over a fresh green salad, or crushed onto a thick slice of grilled Belgian bread topped with fresh ricotta or creamy goat cheese.
