Dry
- 2 cups (500 ml) all-purpose flour
- 2 ½ tsp (12 ml) ground cinnamon
- 2 tsp (10 ml) baking powder
- 1 tsp (5 ml) baking soda
- ¾ tsp (4 ml) ground ginger
- ½ tsp (2 ml) ground nutmeg
- ½ tsp (2 ml) kosher salt
- ¼ tsp (1 ml) allspice
- ⅛ tsp (0.5 ml) ground cloves
Wet
- 1 ¾ cups (430 ml) pumpkin purée
- 1 cup (250 ml) golden brown sugar, packed
- ½ cup (125 ml) salted butter, melted and slightly cooled
- ¼ cup (60 ml) vegetable oil
- 5 large eggs
- 1 tsp (5 ml) vanilla extract

- 2 tbsp (30 ml) raw pumpkin seeds

Preparation
- Preheat the oven to 350 °F (177 °C). Butter and flour a 9 x 5 in (22 x 12 cm) loaf pan and set aside.
- In a medium bowl, whisk together the flour, cinnamon, baking powder, baking soda, ginger, nutmeg, salt, allspice and cloves. Set aside.
- In a large bowl, whisk together the pumpkin purée, brown sugar, melted butter and oil. Add the eggs and vanilla, then whisk for about 2 minutes, until the mixture is completely smooth.
- Fold in the dry ingredients with a spatula or wooden spoon, mixing just enough to moisten the flour. Don’t go beyond that. It’s what keeps the bread tender.
- Spread the batter evenly in the pan and scatter the pumpkin seeds on top. Bake for 60 to 70 minutes, until a toothpick inserted in the centre comes out clean. Let rest 10 to 15 minutes in the pan, then turn out onto a wire rack to finish cooling.
