Pepperoni pizza-style pasta salad

Salad
- 454 g of rotini (dry pasta)
- 175 g of sliced pepperoni
- 1 red bell pepper, diced
- ½ red onion, finely chopped
- ½ English cucumber, diced
- 1 cup (250 ml) of shredded Tex-Mex cheese blend
Dressing
- ⅓ cup (80 ml) of 0% Greek yogurt
- 5 tbsp (75 ml) of light mayonnaise
- 3 tbsp (45 ml) of homemade or store-bought pizza sauce
- 2 tbsp (30 ml) of honey
- 2 garlic cloves, crushed
- 1 tsp (5 ml) of dried oregano
- Salt and black pepper

Preparation
- Cook the rotini according to the package instructions. Drain, rinse under cold water and let cool slightly.
- Meanwhile, cook the pepperoni in a dry pan over medium heat until crispy. Drain on a paper towel and let cool completely.
- In a large bowl, whisk together the Greek yogurt, mayonnaise, pizza sauce, honey, garlic, oregano and a generous pinch of salt and pepper.
- Add the slightly cooled rotini, red bell pepper, red onion, cucumber and cheese blend. Pour in the dressing and toss until everything is well coated.
- Add the crispy pepperoni just before serving so it keeps all its crunch. Serve cold.
