Parmesan croutons for bruschetta

- 1 baguette
- 1 tsp (5 ml) finely chopped garlic
- 3 tbsp (45 ml) extra virgin olive oil
- ½ cup (60 g) grated parmesan
- Italian spices, to taste
- Salt, if needed

Preparation
- Preheat oven to 400°F (200°C), rack in center position.
- Mix garlic with olive oil in a small bowl. Set aside.
- Slice baguette diagonally into ½ inch (1 cm) thick slices.
- Arrange slices on a parchment-lined baking sheet. Generously drizzle slices with garlic oil and brush over entire surface. Sprinkle Italian spices to taste and distribute grated parmesan everywhere. If spice blend is not salted, add a pinch of salt.
- Bake 5 minutes, then broil on high 1 to 2 minutes, until edges are golden brown. Watch closely, it burns fast.
