Mini Beef & Bacon Poutines

Ingredients for my mini poutines
- 1 package (360 g) of M&M Food Market Beef & Bacon Skewers
- 750 g frozen store-bought fries
- 1 can of poutine gravy (398 ml)
- 1 packet of powdered demi-glace
- 1 1/4 cups (310 ml) water
- 400 g cheese curds
- 2 green onions, thinly sliced
- Salt and freshly ground pepper

Preparation
- Preheat the oven to 425°F (220°C) and line two baking sheets with parchment paper.
- Place the beef and bacon skewers on one of the baking sheets and cook in the center of the oven for 15 to 20 minutes, flipping halfway through, until the meat is nicely browned. Remove from the oven, let rest for a few minutes, then remove the meat from the skewers and pull it into pieces.
- Meanwhile, spread the frozen fries on the second prepared baking sheet. Bake in the center of the oven for about 25 minutes, flipping halfway through, until the fries are lightly crispy. Keep the fries warm in the turned-off oven, door slightly ajar, while you prepare the sauce and assemble the portions.
- In a medium saucepan, combine the poutine gravy and powdered demi-glace. Add the water and whisk until smooth. Bring to a boil, reduce to low heat and let simmer for 3 to 4 minutes, until the sauce thickens slightly. Keep hot.
- To assemble, divide the fries into small bistro-style glasses or individual bowls. Add pieces of meat, then cheese curds. Repeat with a second layer of fries, meat, and cheese.
- Generously drizzle with hot sauce, season with salt and pepper, and finish with sliced green onions.
- Serve immediately while the cheese is just starting to melt and the sauce coats every bite.
