Maple roasted sweet potatoes

For the potatoes
- 2 large sweet potatoes, peeled and cut into 1″ slices
- Olive oil
- Salt and freshly ground pepper
For the sauce
- 1/4 cup (60 ml) maple syrup
- 3 tbsp (45 ml) olive oil
- 2 tbsp (30 ml) soy sauce
- 3 tsp (15 ml) Dijon mustard
- 1 1/2 tsp (7.5 ml) white balsamic vinegar
- 1/2 tsp (2.5 ml) dried thyme

Preparation
- Preheat oven to 425°F.
- Place potato slices in a large bowl, drizzle with olive oil and season generously with salt and pepper. Toss to combine.
- Place the slices on the baking sheet, leaving plenty of space between them. Place in the oven and bake for around 45 minutes, or until golden-brown on the underside.
- Place the ingredients for the sauce in a bowl, season generously with salt and pepper and whisk to combine.
- Serve on plates, roasted side up, and drizzle with sauce!
