Juicy air fryer steak with garlic butter

Dry marinade
- 1 tbsp (15 ml) smoked paprika
- 1 tsp (5 ml) garlic powder
- 1 tsp (5 ml) onion powder
- 1 tsp (5 ml) brown sugar
- ½ tsp (2.5 ml) ground black pepper
- ½ tsp (2.5 ml) sea salt
- ¼ tsp (1.25 ml) cayenne
Steak
- 1 strip loin of 1 lb (450 g), about 1.5 in (3.8 cm) thick
- 1 tbsp (15 ml) olive oil
- Flaky sea salt, for garnish
Garlic herb butter
- 3 tbsp (45 ml) unsalted butter
- 2 garlic cloves, grated on a Microplane
- 2 tbsp (30 ml) fresh parsley, chopped
- 1 tbsp (15 ml) fresh chives, chopped
- Zest of ½ lemon
- Salt and pepper, to taste

Preparation
- Remove the strip loin from the refrigerator and let come to room temperature for 30 minutes.
- In a small bowl, mix the smoked paprika, garlic powder, onion powder, brown sugar, pepper, sea salt, and cayenne. Brush the strip loin with olive oil on all sides, then coat generously with the dry marinade.
- Preheat the air fryer for 5 minutes at 450 °F (230 °C).
- Place the strip loin in the air fryer basket and cook for about 8 minutes on one side only, without flipping. Use a meat thermometer and remove the steak a few degrees before your desired doneness, as timing may vary depending on your air fryer.
- Remove the steak and immediately wrap tightly in aluminum foil, and let rest for 5 minutes.
- While resting, melt the butter in a small saucepan over medium heat, add the garlic and heat for 2 minutes while stirring, without boiling.
- Remove from heat and add the parsley, chives, lemon zest, salt, and pepper.
- Slice the strip loin and generously drizzle with garlic butter, then finish with a pinch of flaky sea salt.
