Iced tea
- 6 cups (1.5 L) water
- 1 ¼ cup (310 ml) granulated sugar
- ½ tsp (2.5 ml) baking soda
- 10 black Orange Pekoe tea bags (Tetley or similar)
- Juice of 10 fresh lemons (about 2 cups / 500 ml)
- 1 lemon cut in half-moon slices, for serving
- Ice cubes, for serving

Preparation
- Bring water to a boil in a large saucepan.
- In a very large heat-resistant pitcher, combine the boiling water, baking soda and sugar. Stir vigorously to fully dissolve the sugar (the baking soda may create a light foam on the surface. That’s normal, just stir again as needed). Add the tea bags and steep 3 to 5 minutes depending on your preferred strength (3 minutes for a medium tea, 4 to 5 minutes for a bold tea).
- Remove the tea bags without squeezing them and discard immediately.
- Add the fresh lemon juice and stir gently.
- Refrigerate at least 2 hours, until the tea is well chilled. Stir before serving if needed.
- To serve, place lemon half-moon slices and ice cubes in each glass, then pour the iced tea over top.
