Ingredients

  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, finely chopped
  • Olive oil (for cooking)
  • 800g medium-lean ground beef
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground savory
  • 1/2 tsp. ground sage
  • 1/2 tsp. ground thyme
  • 1 tsp. salt
  • 150g cheese curds, chopped
  • 1/3 cup DORA fruit ketchup
  • Pepper to taste

Preparation

  • In a frying pan, heat olive oil over medium heat. Sauté onion and garlic for 3-4 minutes, then remove from heat.
  • In a large bowl, place ground beef, onion and garlic mixture, spices, salt, cheese curds, fruit ketchup and pepper to taste. Mix with your hands until smooth.
  • Shape into keftas (7-8 flat skewers), taking care not to make them too large to prevent them from breaking under the weight of the meat.
  • Preheat the BBQ to maximum power and lay out baking sheets. Cook for 5-6 minutes on each side. Serve with fruit ketchup.

Side :

  • Arugula and green onion salad, seasoned with olive oil and white balsamic vinegar.
