Grilled mussels with IPA beer, lemon and fresh herbs

Ingredients
- 1 kg (2 lb) of mussels, cleaned
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 small yellow onion, finely chopped
- 3 garlic cloves, finely chopped
- 1/4 cup finely chopped fresh oregano
- 1/4 cup finely chopped fresh thyme
- 1 1/2 cup of IPA Session beer
- The juice of 1 lemon
- 1/4 cup fresh parsley, finely chopped + a little for the service
- Salt and pepper from the mill
- Equipement required : BBQ wok

Preparation
- In a large saucepan over medium heat, add oil and 1 tbsp. butter. Add the onion and garlic and cook for 3 to 4 minutes.
- Add the oregano and thyme and mix. Continue cooking for 1 minute.
- Add the beer, the lemon juice, the remaining butter and season with salt and pepper. Simmer for 5 minutes, at low bubbles, stirring. Remove from heat and reserve.
- Preheat the BBQ to maximum intensity, the wok on the grates.
- Add the mussels in the basket and cook for 7 to 10 minutes, or until the mussels are all open.
- Throw the mussels and parsley in the saucepan and crank at high heat. Season with salt and pepper and cook for 2 minutes, mixing, to coat the mussels with the juice.
- Divide the mussels and garnish with fresh parsley. Serve with a bread baguette or French fries !!!
