Ingredients
- 2 medium eggplants, top and bottom removed, cut into ¾ inch (2 cm) thick slices
- Olive oil
- 1 clove garlic, minced
- Juice of ½ lemon
- 2 tbsp (30 ml) tahini
- ½ tsp (2.5 ml) smoked paprika + extra for serving
- ¼ tsp (1 ml) cumin
- Fresh parsley, for serving
- Salt and freshly ground pepper

Preparation
- Place the eggplant slices on a large baking sheet, brush generously with olive oil on both sides, then season with salt and pepper.
- Preheat the barbecue to high heat, then reduce to medium heat.
- Place the baking sheet on the grill grate and cook for 3 to 4 minutes per side or until the flesh is tender. Remove from heat and let cool for 10 minutes.
- Remove the skin from the eggplant slices and place them in a food processor. Add 2 tbsp (30 ml) olive oil, garlic, lemon juice, tahini and spices. Season with salt and pepper, then blend until smooth.
- Pour into a large bowl and drizzle with a thin stream of olive oil. Decorate with smoked paprika and garnish with fresh parsley. Serve with fresh vegetables and crackers.
