Feta and cherry tomato casserole

  • 200 g feta cheese, cut into 3 thick slices
  • 450 g cherry tomatoes
  • 4 garlic cloves, crushed
  • 7-8 sprigs fresh thyme
  • Olive oil
  • 1/2 tsp dried oregano, or more to taste
  • Spicy oil to taste
  • Fresh basil leaves for serving
  • Baguette bread for serving
  • Salt and freshly ground pepper

Preparation

  • Preheat oven to 425°F (220°C).
  • Place the feta slices in the center of a baking dish, arrange the cherry tomatoes around them and add the garlic cloves.
  • Scatter the thyme sprigs over the top, then drizzle generously with olive oil, enough to cover the entire bottom of the dish. Add the oregano, lightly salt the tomatoes and season generously with pepper.
  • Place in the oven and bake for 35 minutes. Place on GRILL and cook for 3 to 4 minutes, or until the tomatoes are nicely grilled and the feta is golden brown. Remove from oven and lightly crush feta. Let stand for 5 minutes. Remove thyme sprigs.
  • Drizzle with hot oil to taste, garnish with basil leaves and devour with a baguette!
