Fennel, oranges and black olives salad

  • 1 big fennel bulb ( white part only ), cut in half then sliced very thin
  • 1/3 red onion ( or more to taste ), sliced ultra thin
  • 2 oranges peeled raw, cut in half then sliced
  • 2/3 cup good quality Spanish pitted black olives, sliced
  • Good quality extra virgin olive oil
  • Salt and ground pepper



  • In a big bowl, add the fennel, onions, oranges and olives then toss well.
  • Add a drizzle of olives oil then season with salt and pepper to taste. Toss again then pour in a big presentation plate!
