- 2 cups (500 ml) all-purpose flour
- 1 tbsp (15 ml) brown sugar
- 3 tsp (15 ml) baking powder
- A pinch of salt
- 2 eggs
- 2 cups (500 ml) milk
- ¼ cup (60 ml) vegetable oil
- ½ tsp (2.5 ml) dark rum (or vanilla extract)

- Preheat the waffle iron to medium.
- In a large bowl, combine the flour, brown sugar, baking powder and salt and mix well.
- In another bowl, add the eggs, milk, oil and rum and whisk to combine. Pour into the dry ingredients and whisk vigorously to break up any lumps.
- Pour the batter, about one cup at a time (check your waffle iron’s manual), and cook 3-4 minutes until the waffle is cooked and well browned. Cook time varies between irons. Go by color, not just time.
- To keep waffles warm before serving, place them on a rack in a 200 °F (95 °C) oven. Never stack them. Trapped moisture will soften them.
- Serve as you go for maximum crispiness. Top with fresh fruit, butter and plenty of maple syrup (or pancake syrup, no judgment)!
