Easy homemade waffles
- 2 cups all-purpose flour
- 1 tbsp. brown sugar
- 3 tsp. baking powder
- pinch of salt
- 2 eggs
- 2 cups milk
- 1/4 cup vegetable oil
- 1/2 tsp. dark rum (or vanilla extract)

Preparation
- Preheat waffle iron over medium heat.
- Pour flour, brown sugar, baking powder and salt into a large bowl and mix well.
- In a separate bowl, add eggs, milk, oil and rum, then whisk to combine. Add to dry ingredients and whisk vigorously to break up any lumps.
- Pour in the mixture, about one cup at a time (see your waffle iron’s instruction manual) and cook for 3-4 minutes until the waffle is cooked and golden-brown. Obviously, cooking times vary from one waffle iron to another. Once again, read the guide! You can keep them in the oven at 200°F (but don’t stack them), but waffles tend to soften quickly. I suggest serving them as you go, for optimum freshness! Garnish with fresh fruit on top, butter and lots of maple syrup!
