Preparation
- Cut the ends off the limes (the pointed tip and the back end), then slice each lime into quarters, leaving the peel intact.
- Place the lime quarters, mango flesh, sweetened condensed milk, maple syrup, salt and ice-cold water into the blender.
- Blend for about 20 seconds maximum at high speed, NO MORE. Beyond that, the lime peels start releasing their bitterness and your lemonade becomes unpleasant.
- Strain the liquid through a fine-mesh strainer or sieve over a large pitcher to remove the pulp and peels. Press with the back of a spoon or spatula to extract all the liquid. Taste and add a little more maple syrup if needed.
- Fill each glass generously with ice, then pour in the lemonade to about ¾ full.
- Top with a splash of lime sparkling water for a fizzy finish (optional but excellent). Garnish with a lime round and serve immediately.
