Ingredients for the mayonnaise
- 1/4 cup mayonnaise
- 2 tablespoons strong mustard
- 2 tablespoons honey
- 1 teaspoon Italian spices
- Salt and pepper

- 800 g ground turkey
- 1/4 cup Budweiser beer
- 1/4 cup breadcrumbs
- 2 tablespoons Montreal steak spice
- 200 g Oka Classique cheese rind removed, cut into cubes
- 8 thin slices of pancetta, cooked until crisp
- Leaf lettuce
- 4 buttered and lightly toasted hamburger buns

Preparation
- In a bowl, put the ingredients for the mayonnaise, season with salt and pepper generously and mix. Reserve in the fridge.
- In a large bowl, put the ground turkey, beer, breadcrumbs, steak spices and mix. Form four large balls and using your thumb, punch a large hole in the center and stuff with cheese. Close the hole with the meat and flatten to form four patties.
- Preheat the barbecue to high power and reduce to medium power. Oil the grates. Place the patties on the heat and cook, 3 to 4 minutes per side or until the meat is cooked through.
- Spread 1 to 2 tablespoons of sauce on the bottom and top bread. Place a few lettuce leaves on the bottom bun and place the meat. Add 2 pancetta chips, put the top bread and prick with a long toothpick!
