Bacon cheeseburger with maple pancakes

🥓 Maple bacon

8 slices maple bacon
🧄 For the burger sauce
- 1/2 cup (125 ml) mayonnaise
- 1/4 cup (60 ml) ketchup
- 2 tbsp (30 ml) sweet relish
- 1 tbsp (15 ml) Dijon mustard
- 1 tsp (5 ml) smoked paprika
- Salt and pepper, to taste
🥞 Pancakes
- 1 cup (125 g) all-purpose flour
- 1 tbsp (15 ml) baking powder
- 1/4 tsp (1 ml) salt
- 2 tbsp (25 g) granulated sugar
- 1 large egg
- 1 cup (250 ml) milk
- 2 tbsp (30 ml) vegetable oil
🥩 For the smash patties
- 500 g (1.1 lb) medium ground beef
- Salt and pepper, to taste
- 4 slices of orange cheddar or American cheese

Preparation
- Preheat the oven to 425°F (220°C). Line a baking sheet with aluminum foil.
- Bake the bacon slices for 20 to 25 minutes, until almost crispy. Drain on paper towels and set aside.
- In a bowl, mix all the sauce ingredients. Chill in the fridge (it’s even better cold). Save the leftovers as a dip for veggies.
- In one bowl, mix the flour, baking powder, salt, and sugar. In another bowl, whisk the egg with the milk and oil.
- Pour the wet ingredients into the dry ingredients and mix gently.
- Heat a nonstick skillet over medium heat and lightly oil it. Pour 1/3 cup (80 ml) of batter per pancake.
- Cook for 1 to 2 minutes per side, until golden. Keep the pancakes warm.
- Place the ground beef in a large bowl, season with salt and pepper, and mix well. Form 4 equal balls by hand and flatten with a spatula. Keep refrigerated until ready to cook.
- Preheat the BBQ to high heat. Oil the grates.
- Place the meat balls on the hot grill. Cook for 1 minute, turn 45°, and cook for another minute. Flip, add a slice of cheese to each patty, close the lid, and let the cheese melt.
- Time to build your bacon cheeseburgers! Place one pancake as the base, spread 1 tablespoon of sauce, and add 2 cheese-covered patties.
- Add 3 slices of bacon, top with another pancake (sauce on the inside), and secure with a skewer. Finish with a generous drizzle of maple syrup. Good luck!
