Preparation

  • Fill a large white wine glass three-quarters full with ice cubes.
  • Pour the very cold prosecco over the ice first. This order is important. Prosecco poured first protects the bubbles, whereas Aperol poured first would form a dense layer at the bottom that would require more mixing and lose its fizz.
  • Then add the Aperol.
  • Top with club soda.
  • Stir very gently with a cocktail stick or cocktail spoon (only 2 or 3 turns) to preserve the bubbles.
  • Garnish with half an orange slice placed directly in the glass. Serve immediately.
