Preparation

  • Pat the chicken drumsticks completely dry with paper towel. This step is what gets you crispy skin, so do not rush it.
  • In a bowl, stir together the dark brown sugar, salt, both paprikas, black pepper, dried oregano, garlic powder, mustard powder and cayenne pepper until the blend looks even in colour.
  • Put the drumsticks in a large bowl, add a drizzle of olive oil and toss until every one of them is lightly coated.
  • Sprinkle about 6 tbsp (90 ml) of the spice blend over the drumsticks and toss again so the rub reaches every surface, including under the skin folds.
  • Preheat the air fryer to 400°F (200°C) for 5 minutes.
  • Lay the drumsticks in the air fryer basket in a single layer, none of them touching. Cook in two batches if they do not fit.
  • Cook for 25 to 30 minutes, shaking the basket once around the 15 minute mark.
  • Check that the internal temperature reaches 165°F (74°C) at the thickest part, without touching the bone. The skin should be deep mahogany and crisp. Serve right away.
