It&#8217;s a window, not a date on the calendar. When the fresh ears disappear from the roadside stands, I switch to frozen corn and nobody at my table has ever noticed.<\/p>\n<h3>\ud83e\udd53 <strong>The maple bacon stays in the pot<\/strong><\/h3>\n<p>Almost every corn chowder recipe out there crisps the bacon, pulls it out, and scatters it on top at the last second. I do the opposite. My maple bacon goes back into the pot and simmers twenty minutes with everything else. Yes, I lose the crunch. What I get instead is a broth that tastes smoky and faintly sweet all the way to the last spoonful. I&#8217;d make that trade every single time.<\/p>\n<h3>\ud83e\udd54 <strong>Bacon fat makes the roux, baby potatoes do the rest<\/strong><\/h3>\n<p>Once the bacon is out, I pour off three quarters of the fat and keep the rest. That&#8217;s what the flour cooks in. Nothing to add, nothing to buy, the whole base of the chowder is already sitting in the bottom of the pot and it tastes like maple. For the potatoes, I use baby potatoes cut in quarters instead of diced. The skin holds each piece together through the simmer, so you still have potatoes at the end instead of mush.<\/p>\n<h3>\ud83c\udf72 <strong>This is dinner, not a starter<\/strong><\/h3>\n<p>It makes six to eight full bowls. If you&#8217;re after a smooth, blended corn soup, this isn&#8217;t it: my chowder has chunks, it has bacon, it has potatoes you can bite into.
