I don’t drink alcohol anymore, so I’m always looking for fresh, interesting and refreshing mocktails. Not just “sparkling juice to pretend”. A real drink built with depth of flavor. I saw a girl on Instagram who makes lots of creative mocktails and there was one with carrot juice. At first I found the idea gross, then I tested it. The result is a bright orange mocktail, slightly sweet-spicy, completely delicious, that made me completely change my mind. It became my signature mocktail for when I host this summer.<\/p>\n
Nobody thinks of carrot juice in a mocktail, but that’s exactly what sets my version apart from all the peach-ginger cocktails you see around. Carrot brings two things: a flaming orange color that makes your drink look pro in the glass, and a natural sweetness that balances the heat of fresh ginger without adding refined sugar. Combined with peach, lime and a bit of fresh grated ginger, you get a complex concentrate that tastes much more than the sum of its parts.<\/p>\n
The other reason this recipe is completely insane is that we make a concentrate in advance that keeps for a full week in the refrigerator. You prepare it Sunday night, put it in a Mason jar in the fridge, and all week you just have to take out a glass, fill with ice, add \u2153 cup of concentrate and top with sparkling water. Pop pop pop, mocktail ready in 30 seconds. It’s perfect for people who don’t drink in general, for pregnancy, for your Dry January, or just for those who want a great summer drink without feeling like they’re drinking ordinary fruit juice.
