Waffles are the standing tradition at my place. When my kids are here, the iron comes out, every two weeks, no discussion. The house smells like brown sugar and browning batter, everybody is in a decent mood, and nobody complains about breakfast. With kids, that last part alone is worth the recipe. Fifteen minutes of work and it lands every single time.<\/p>\n
Most waffle recipes will tell you to separate the eggs and beat the whites to soft peaks. I have never seen the point. Whole eggs, whisked straight into the batter, and they still come out crisp outside and light in the middle. The baking powder does the lifting. What actually decides whether a waffle is crispy is how dark you let it go and what you do with it the second it leaves the iron. Not a bowl of foam.<\/p>\n
Don’t repeat this. I love pancake syrup. The cheap stuff. I grew up on it because real maple was out of our budget, and I still like that it tastes like straight brown sugar. On a hot waffle with a slab of butter melting into the squares, it is my weakness. Real maple syrup is incredible too, obviously.
