You found your recipe. The secret is two things: boneless skinless chicken thighs (juicier, more flavorful, and way more forgiving than breasts), plus an IPA marinade with soy sauce, balsamic, brown sugar and Dijon mustard that coats the meat and caramelizes on the grill. This is the recipe for summer BBQs, long weekends, weeknight dinners, entertaining. It plays everywhere.

🔥 Chicken thighs = the cut that forgives

I always go with boneless skinless chicken thighs for these skewers. Juicier, more flavorful, and above all way more forgiving than breasts on the grill. Breasts dry out in a heartbeat, but thighs hold their juice even if you’re distracted for 30 seconds. Served with a little drizzle of reserved fresh marinade at the table, you’ll lose it at how tender the chicken turns out.

🍺 A versatile marinade that delivers

This marinade is a little masterpiece: IPA beer, soy sauce, balsamic vinegar, brown sugar, Dijon mustard, lemon, dried herbs. Ingredients that fit together like they were born to. I grab the Belle Mer (Archibald) when I find it, otherwise any other Quebec IPA or pale ale works. Bonus: this marinade also works beautifully for pork, fish and shrimp. Take notes. Serve with an orzo salad with bocconcini and pesto, grilled BBQ potatoes with garlic-lemon butter, or grilled rapini, and you walk away with the honors.

🍗 The best grilled chicken skewers: juicy thighs, marinade that delivers Looking for grilled chicken skewers that actually taste like something, come off the BBQ juicy, and get unanimous votes around the table?
