These stuffed rolls followed me through my whole childhood. I would come back inside after playing in the snow, mitts soaked and nose running, and there would be a pot of this on the stove. My mother passed the recipe on to me when I got my first kitchen. I made it, I tested it, and I changed nothing. Not a pinch.<\/p>\n

It comes from her side of the family, in Sherbrooke. My grandmother made it too, with the exact same soup. Three generations and not one thing has moved. One thing though: at our house these were never called sloppy joes. They were petits pains fourr\u00e9s, stuffed little rolls, full stop. I learned the English name much later, well outside my mother’s kitchen.<\/p>\n

\ud83c\udf72 Yes, it takes condensed chicken gumbo soup<\/strong><\/h3>\n

This is where people hesitate, and this is exactly where you should hold the line. That can of condensed chicken gumbo soup<\/a> is not an embarrassing shortcut you hide at the back of the cupboard. It is the recipe. I have no interest in building a from-scratch sauce to look more serious: this is all it is, and it is good exactly like this. The okra binds the beef and gives it that slightly silky texture that stays inside the roll instead of running down your wrist. The chicken broth salts it just right. The little vegetables melt straight into the sauce.<\/p>\n

Swap in tomato soup and you get a perfectly decent ground beef sandwich. Good, even. But it is no longer my mother’s recipe, and you taste the difference on the first bite.<\/p>\n

My kids would eat this three times a day. They circle the pot for the whole forty-five minutes of simmering, asking if it is ready yet. Five minutes of prep, an hour on the burner, and everyone is happy without anybody having to work hard for it.<\/p>\n

At our house it comes out on Christmas Eve and again for brunch on the twenty-fifth. I also make it in the middle of July, because it is good and it asks nothing of me. But in my head, it will always be a Christmas recipe.<\/p>\n","protected":false},"excerpt":{"rendered":"
