Grilled mussels with IPA beer, lemon and fresh herbs

These mussels are so easy to make! The BBQ adds a perfect toasty side and the IPA beer, lemon and herbs beer sauce will coat everything as if you had just landed in paradise. You will thank me soon!

Ingredients

  • 1 kg (2 lb) of mussels, cleaned
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 small yellow onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 1/4 cup finely chopped fresh oregano
  • 1/4 cup finely chopped fresh thyme
  • 1 1/2 cup of IPA Session beer
  • The juice of 1 lemon
  • 1/4 cup fresh parsley, finely chopped + a little for the service
  • Salt and pepper from the mill
  • Equipement required : BBQ wok

Preparation

  • In a large saucepan over medium heat, add oil and 1 tbsp. butter. Add the onion and garlic and cook for 3 to 4 minutes.
  • Add the oregano and thyme and mix. Continue cooking for 1 minute.
  • Add the beer, the lemon juice, the remaining butter and season with salt and pepper. Simmer for 5 minutes, at low bubbles, stirring. Remove from heat and reserve.
  • Preheat the BBQ to maximum intensity, the wok on the grates.
  • Add the mussels in the basket and cook for 7 to 10 minutes, or until the mussels are all open.
  • Throw the mussels and parsley in the saucepan and crank at high heat. Season with salt and pepper and cook for 2 minutes, mixing, to coat the mussels with the juice.
  • Divide the mussels and garnish with fresh parsley. Serve with a bread baguette or French fries !!!
