Ingredients

  • 750g ground pork medium-lean
  • 2 shallots, grated
  • Salt and ground pepper
  • 2 cups sharp cheddar, grated
  • 1 tablespoon maple syrup
  • 1/4 cup Blonde de Chambly beer by Unibroue
  • 2 tablespoons fresh thyme leaves, chopped
  • 2 garlic cloves, finely chopped
  • 1/2 teaspoon fennel seeds
  • 1/2 cup panko breadcrumbs
  • Olive oil

Preparation

  • Preheat the oven at 425°F.
  • In a big bowl, add all the ingredients except the panko. Mix well with your hands. Add the panko then mix again.
  • Pour a couple of drops of olive oil in your hands and rub them together, this will prevent the mix to stick! Take about 1 tablespoon of the mix, form a nice and cute ball then place on a non-stick cooking pan. Continue with the rest of the mix and place them on the pan at about 2-4 cm apart.
    Throw in the oven and cook for about 20-25 minutes, until nicely cooked and golden! Flip from times to times to make sure they color on all sides!
