What exactly is a butter chicken? It is a recipe native from India that consists of chicken (DUH), butter, tomatoes and spices. Here is my easy yet ultra tasty version just for you!

Ingredients

  • 3 tablespoons butter
  • 1 medium yellow onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 3 boneless and skinless chicken breasts, cut in big cubes
  • 1 tablespoon curry powder
  • 1 can 400ml of light coconut milk
  • 1 can 284ml condensed tomato soup
  • 2 cups cauliflower, cut in medium chunks
  • 2 cups green beans, cut in half
  • Fresh coriander to garnish
  • Salt and ground pepper

Preparation

  • In a big pan at medium heat, melt the butter and cook the onion and garlic for 2-3 minutes.
  • Add the chicken, the curry, season with salt and pepper then stir well. Cook for 5 minutes.
  • Add the coconut milk, the condensed soup and the cauliflower then stir well. Always at medium heat, simmer for 10 minutes while stirring often.
  • Add the green beans and stir. Simmer for another 10 minutes to let that sauce reduce! Serve on your favorite rice and garnish with fresh coriander!
